Is there a way to make a creature's power and toughness */*? When I try to enter anything other than numbers in those fields it wont generate.

As of right now, no. You'll have to use some sort of coded language. I'll propose the following convention:
For variable toughness or power creatures, use a -1. For both, mark the P/T as -1/99.
